[Bun Thit Nuong | Vietnamese Grilled Pork Noodle Salad]
Bún thịt nướng is one of our favourite Vietnamese dishes. It's essentially rice noodles with grilled meat (any types of meat but always marinated with lemongrass) This noodle salad dish is eaten cold like a salad.

Hiding itself in a small alley, it took me 3-4 turns before I can find Aunt Hue's banh canh stall. The way in is super narrow, plus you will have to leave your motorbike outside
.
This stall earned its reputation for “bánh canh” and “fried tapioca”, however, I decided to try an impressive dish called “Chả trộn”. Similar to beef jerky salad, as in picture 1, the dish features papaya pickles, mints, 2 types of chilli jam, sesame and chopped fried Vietnamese sausage ("chả"). Before serving, a ladle of vinegar or sour sauce will be added to balance the flavour.

Another highlight here is “bánh canh”. Honestly, don’t let the picture fool you 😂. With the price of 25.000VND (you can choose either tapioca noodles or tapioca pearls), beneath the oil, there’re 2 egg quails, fried Vietnamese sausage and a big cube of crab meat. For me, the broth is kinda aromatic with significant shrimp paste smell. I didn’t try the Fried tapioca noodle as it looks too oily 😔

Nép mình trong con hẻm nhỏ, phải tốn 3-4 lần quẹo vào hẻm nhỏ, mình mới đến quán bánh canh Dì Huê. Đường vào hơi ngoằng nghèo, phải để xe phía ngoài trước khi vào quán nên hơi lằng nhằng 1 tí.

Quán này nổi tiếng với món bánh canh và bột lọc chiên, tuy nhiên khi đến thì mình quyết định thử món có tên khá lạ là “Chả trộn”. Tương tự như bò khô trộn, món này gồm đu đủ, rau thơm, 2 loại tương ớt, mè, đậu phộng và đặc biệt là chả chiên được xắt sợi. Trước khi ăn, cô chủ quán rưới lên thêm 1 lớp giấm (nước dùng) vị hơi chua chua, ăn kết hợp khá ổn, không bị ngán.
Món thứ nữa là bánh canh. Đừng nhìn hình mà tưởng tô ít nhé. Một tô 25k (có thể gọi bánh canh bột lọc hoặc bột báng) bao gồm 2 quả trứng cút, chả chiên và một miếng riêu cua khá to. Nước dùng nóng hổi, đậm vị ruốc nhưng hơi nhiều so với lượng bột nên mình cảm giác tô bánh canh bị loãng. Mình không ăn thử bột lọc chiên vì thấy nhiều dầu

Ingredients:
Serves 4- pax
Ingredients for pork
=====
Marinate pork for at least 1.5 hours. Then bake/air fry at 150C for 10 mins followed by 180C for 5 mins on the other side.
250g of pork shoulder butt
1/2 thumb size of ginger
2 shallots
1 clove of garlic
2 stalks of lemongrass (use only the white part)
1 tablespoon of oyster sauce
1.5 tablespoons of honey
1.5 tablespoons of fish sauce
3 tablespoons of water
1 tablespoon of cooking oil
A few dashes of white pepper
Ingredients for pickled vegetables

Marinate vegetables for at least 2 hours
130g of daikon
130g of carrots
2 tablespoons of white vinegar
1 tablespoon of sugar
Ingredients for salad dressing
====
3/4 cup of water
1.5 tablespoons of sugar
2 tablespoons of fish sauce
Juice from 4 pieces of calamansi
2 pieces of chopped bird's eye chilli
1 clove of chopped garlic
Other ingredients
====
500g of rice vermicelli (noodles)
Some Chinese parsley
Some mint leaves
